For the Whipped Feta For the Roasted Tomatoes Serving
8 oz block of Feta cheese, drained 1 pint of Cherry or Grape Tomatoes Crusty baguette slices
4 oz block of Cream Cheese, softened 2 cloves of Garlic, smashed Pita chips or crackers
1/4 cup Extra Virgin Olive Oil (EVOO), plus extra for drizzling 2 sprigs of fresh Rosemary (or Thyme) Fresh Parsley or Chives for garnish
1-2 Tbsp Milk (or water) to adjust consistency 2 Tbsp EVOO Hot Honey or regular honey
Pinch of Black Pepper Salt and Pepper to taste  

Part 1: Roast the Tomatoes (Day Before)

  1. Prep: Preheat your oven to 400∘F (200∘C). Toss the cherry tomatoes, smashed garlic cloves, 2 Tbsp of EVOO, rosemary sprigs, and a good pinch of salt and pepper on a baking sheet.

  2. Roast: Roast for 15-20 minutes, or until the tomatoes are blistered and starting to burst. The juices will mix with the oil, creating a delicious sauce.

  3. Cool & Store: Let them cool, then transfer the tomatoes, garlic, rosemary, and all the pan juices to an airtight container. Refrigerate until ready to use.

Part 2: Whip the Feta (Day Before)

  1. Combine: In a food processor, combine the feta cheese (drained), softened cream cheese, and 1/4 cup of EVOO.

  2. Whip: Process until completely smooth and creamy. Scrape down the sides as needed.

  3. Adjust: If the dip is too thick, slowly add milk (1 Tbsp at a time) while processing until it reaches a thick, spreadable consistency.

  4. Chill & Store: Transfer to an airtight container and refrigerate.

Part 3: Assemble (At the Host's Home)

  1. Spread: Spread the whipped feta evenly onto a nice serving dish or shallow bowl.

  2. Top: Spoon the roasted tomatoes (including the juices and garlic cloves) right over the center of the feta. Discard the rosemary stems before serving, if you wish, or leave them for visual effect.

  3. Finish: Drizzle with a generous amount of hot honey (or regular honey). Garnish with chopped fresh parsley or chives.

  4. Serve: Serve immediately with toasted baguette slices or good quality crackers.
